TOMATO, AVOCADO AND ARUGULA SALAD

TOMATO, AVOCADO AND ARUGULA SALAD

Ingredients

  • 1 cup arugula
  • 5-6 basil leaves
  • 2 tomatoes
  • 1 avocado
  • 1 cucumber
  • 1 green pepper (small one)
  • 1 tbsp olive oil
  • 1tsp lemon juice
  • salt
  • pepper
  • roasted sesame seeds (1-2 tbsp)

Instructions

  1. Wash all vegetables. If cucumber not organic, better peel it. Chop all vegetables, add to a bowl. Add olive oil, salt, pepper, then mix. Sprinkle roasted sesame seeds on top. Serve with whatever you like (goes with protein, bread, chickpeas, a cooked meal…pretty much anything).
