Simple Bread Pudding

Ingredients

  • 3 large eggs, lightly beaten
  • 1 ½ cups sugar
  • 2 tbsp light brown sugar
  • ½ tsp nutmeg
  • ¼ cup coconut oil, melted
  • 2 ¾ cup half and half
  • 4 cups cubed French Bread
  • ¾ cup raisins

Instructions

  1. Preheat your oven to 375 degrees.
  2. Combine first four ingredients in a large bowl. Stir in coconut oil and half and half. Gently stir in bread and raisins. Pour into a lightly greased 9×9 inch baking dish.
  3. Bake for 50-55 minutes. At the thirty minute mark, remove and cover with foil. Place back in the oven for remaining time.
