Mexican Street Corn Flatbread Pizza

  • 1 package of flatbreads (2 per package)
  • 1/2 cup Mexican crema
  • 2 cloves garlic
  • 1/4 teaspoon salt
  • 4 ears of corn, grilled (I used the 4 pack already packaged in the Kroger Produce)
  • 1 tablespoon Kroger chili powder
  • 1/4 cojito cheese
  • 1 teaspoon Kroger cumin
  • 1/2 teaspoon salt
  • Splash of lime
  • 2 oz Private Selection Crumbled Feta Cheese
  • cilantro

Preheat the oven to 350 degrees. Arrange flatbreads on baking sheets and set aside.

In a bowl, combine the crema, garlic, and salt. Spread the cream mixture over the flatbreads.

Remove the kernels from the corn cobs and combine the corn with the chili powder, cheese, cumin, and salt. Divide corn over the cream mixture. Top each flatbread with feta cheese.

Bake flatbreads for 8 minutes. Remove and hit the pizzas with a tiny splash of lime. Garnish with cilantro.
