Keto Ricotta and Spinach Baked Ham Rollups
- 20 slices deli ham *
- 1/2 cup ricotta cheese
- 1 cup mozzarella cheese
- 1 teaspoon italian seasoning
- 1/2 teaspoon garlic powder
- 2-3 cups spinach
- 1 tablespoon olive oil
Heat up the oven on the broil function and then heat the olive oil in a skillet over medium heat and add the spinach to cook until wilted.
In a mixing bowl, combine the ricotta and mozzarella cheeses until well combined.
Add in the garlic powder, Italian seasoning, and cooked spinach. Stir until all the ingredients are well combined.
Lay out two pieces of deli ham, overlapping each other and then place a spoonful of filling mixture into the middle.
Roll the ham around the filling, forming it into a rollup and then place each one in a single layer in a baking dish.
Cook the ham rollups under the broiler for 5 minutes, or until the edges are browned and the filling is melted.
Serve warm and enjoy!
