Keto Ricotta and Spinach Baked Ham Rollups


  • 20 slices deli ham *
  • 1/2 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon garlic powder
  • 2-3 cups spinach
  • 1 tablespoon olive oil


  • Heat up the oven on the broil function and then heat the olive oil in a skillet over medium heat and add the spinach to cook until wilted.
  • In a mixing bowl, combine the ricotta and mozzarella cheeses until well combined.
  • Add in the garlic powder, Italian seasoning, and cooked spinach. Stir until all the ingredients are well combined.
  • Lay out two pieces of deli ham, overlapping each other and then place a spoonful of filling mixture into the middle.
  • Roll the ham around the filling, forming it into a rollup and then place each one in a single layer in a baking dish.
  • Cook the ham rollups under the broiler for 5 minutes, or until the edges are browned and the filling is melted.
  • Serve warm and enjoy!
