Avocado Cucumber Chicken Salad
- 2 lg Avocados
- 2 Cucumbers
- 2 Green onions (can use white onion)
- Cooked chicken (can replace with salmon)
- 1 TB Sweetener
- 1 TB White cooking wine
- 2 TB Lemon juice
- 1 TB Olive oil
- 2 TB Fresh dill
- 1/2 Tsp Garlic powder
- Salt and pepper
- Other all purpose seasoning of choice
Prepare vegs: Dice cucumber in small bits (in food processor or by hand). Chop avocados up in a bowl so partly mashed and partly chunky. Chop up green onion.
Cut up chicken (or salmon) into bite-size pieces and add in bowl with vegs.
Add juices (white wine, lemon juice, olive oil). Add seasonings in and stir all together.
